Maple pepper dressing

A four-ingredient dressing for roasted veg and bitter greens.

Shake everything in a jar. Keeps a week in the fridge. Cuts through anything roasted: pumpkin, parsnip, sprouts, kale.

Method

  1. Add the oil, vinegar, maple syrup, pepper and salt to a clean jar.

  2. Seal and shake hard for 20 seconds until the dressing emulsifies.

  3. Taste. Add more salt or vinegar to balance.

  4. Dress salads or warm roasted veg just before serving.

  5. Refrigerate any leftover. Shake again before next use.
