No-bake fridge bites with medjool dates and Iranian figs.

A blender, ten minutes, and a chilled tray. Soft-set bites that travel well in a lunchbox. No added sugar.

Method

  1. Blitz the walnuts in a food processor until they look like coarse crumbs.

  2. Add the dates, figs, almond meal, cinnamon and salt. Process until the mix balls up against the side of the bowl.

  3. Roll heaped tablespoons into bites with damp hands.

  4. Set on a lined tray and refrigerate 30 minutes before eating.

  5. Keeps in a sealed jar in the fridge for two weeks.
